Rib Eye Costco Vs KC Steak Company

Rib Eye Taste Test

KC Steak Dry Aged Rib Eyes
KC Steak Dry Aged Rib Eyes

Costco USDA Prime Rib Eye Steaks
Costco USDA Prime Rib Eye Steaks

First Impressions

The Costco Steaks are on the Left and the KC Steak Company Steaks are on the Right.  The Costco Steaks appear to be a lighter color,  The KC Steaks are Dry aged up to 28 days hence the darker color,  The KC Steaks are USDA Prime, they are about 10 oz each and are thicker then the KC Steaks which are 8 oz each and no grade assigned. The Costco steaks are fresh the KC are flash frozen and vacuum sealed.  The Cost steaks were about $18 a lb and the KC Steaks were about $12 a lb on sale and using a $25 off Promo Coupon with free shipping.

Costco Steaks on Grillgrates
Costco Steaks on Grillgrates

Cooking Method

I use the reverse sear method for this cook the Rib-Eyes were removed  from Fridge about 1 hour prior to cooking then Seasoned  well top and bottom  with salt and Pepper.
They then sat at  room temperature for 45 minutes or so.
Pre heated the Grill to 350 Place the Rib Eyes  on the grill
When the Internal temperature reaches 130 remove from grill and rest tented in foil
Turn up the grill to Max Temperature and sear 2 minutes then flip and sear for 2 more minutes
I use GrillGrates to get a better Sear

The Taste

The Costco steaks won the taste test hands down.  They were way more tender.  A lot more juicy and they tasted better.  If the costco steaks are an 8 on a scale of 1 to 10 then the KC Steaks are at most a 4.  I dont see myself buying these KC Steaks again not when Costco was way better.

Cutco Knives Why buy I them used?

Cutco Knives

Brand New Cutco Knife 1723 from Amazon
Brand New Cutco Knife 1723 from Amazon
I purchased the above Cutco Carver 1723 knife on Amazon for my wife as a birthday present.  She absolutely loves it.  I paid $119 for it brand new and my wife claims it is worth every single cent of it.
I have seen many discussions in the Traeger groups on which are the best knives to buy and frankly I don't have enough experience to claim that one brand is better then the next,  I do know that Cutco makes a top of the line product and many chefs, butchers and Pit masters use their knives.

Why do I now buy my Cutco knives used.  Cutco will sharpen or replace your knives forever free of charge,  All you need to do is follow this link to send the Knives to Cutco with a small check to cover return postage,  They will sharpen the knives and polish the handles free of charge.  If they can't sharpen them they will replace them.  If you have a vintage knife and don't want it replaced let them know.

If you have multiple knives send them in all at once to save on return postage. The return postage fee for up to 10 knives is only $9.   The return postage fee for 11 to 25 is $11 and over 25 its only $13 with a maximum of 40 knives.

If you are lucky enough to have a Cutco knife store near where you live they can sharpen them on sight for free or they will send them to the factory for free. If you don't mind picking them up in store about 10 days later you will have factory sharpened knives.  The lady in the store explained that factory sharpened is better then in store sharpened.  I can't wait to get my factory sharpened knives back and start using them. My wife is pretty excited also.  Click here for retail stores

Buying Strategy 1

I don't mind sharing my buying strategy since I am fairly certain I have purchased all the cutco knives my wife and I want in only about 1 weeks time. When I purchase my Knives on E bay I like to use the Buy it Now option.  Some Buy it now options also have a make offer option.  If it has a Make offer I will offer 50 to 70 percent of buy it now price. My goal is to get the knives at below $20 but no more then $25 if at all possible.

I do an E bay search on Cutco Knife.  I will filter on Buy it now and sometimes knife type.  I then set up sort Price Low to high.  I may also set up a filter for $15 to $100 to filter out things like $7.99 polishing cloths.

As an alternative strategy I do a search on cutco and order by ending soonest.  I place a bid with about 1 minute left if I see a Knife I like.  I just won an auction using this strategy and after I get the Knife sharpened I will use it as an incentive on a promotion I plan to run.  Because I have a Cutco store in my area they will send them to the factory for free for service, it takes 10 days  I got this set for only $13 plus 6.50 for shipping.  Cutco 22 Butcher and 26 Fork.

The alternative strategy just keeps on giving.  I have won 3 more knives using this strategy.  I set a timer to tell me when to bid.

A cutco 1798 DD mini trimmer.  It is brand new.  It is a mini version of the 1721 knife.  It is not availabe for sale but used as samples and is a rare knife.  I purchased this knife for $22.09 plus $3.00 shipping.

A cutco 38 spatula spreader.  This Cutco product was only $5.00 plus $3.02 shipping.  It is a first generation product made between 1949. and 1951.  It looks similar to the modern day 1768.

A cutco 1034 bread slicing knife.  This knife was purchased for $9.99 plus 7.00 shipping.  It is a 3rd generation knife and compares to 1724.

Purchase History

I have purchased the following cutco knives on Ebay using the above strategy 1.  The most expensive knife I purchased was only $23 I purchased a 2 piece carver set for $34.99 with shipping ($17.50 each) and a 9 piece steak knife set for 107.08 (11.90 each)

I recently came across this article about the 4 generations of Cutco Knives and knives numbered in the 30's and 47 are 1st generation dating from 1949 to 1951.   The second generation in the 20's ran from 1952 to 1959.  The third generation the 1000 series were produced from 1960 to 1971 and the 4th generation ran from 1971 to present.

The seller indicated the set was in excellent condition and factory sharpened and polished.  This is a 1st generation set produced from 1949 to 1951.  I assume the cardboard sheaths are part of the set since they are pictured.

Pictured are 6 Cutco 1720 paring knives.  I purchased one of them for $20 with $2.62 shipping.  The seller was asking $35.  I used the make offer feature.  These are a 4th generation knife produced from 1971 to present.  I won't know the production date of mine till it arrives.

A Cutco French Chef  knife item number 35 a first generation Knife produced from 1949 to 1951.  This item was purchased for 39.95 with free shipping using the buy it now option.  This knife completes our set.

Although we feel our Cutco knife set is now complete, we do have a few other we wouldn't mind having and I'll keep a lookout for them using both strategies and purchase them if I get the price I am willing to pay.

The Taste Test

The meat was tender and Juicy.  It tasted amazing. My wife made her signature sweet potatoes to go with the Ribeyes,

Please Note:

Any recipe I make is just a guideline.  I am not a big fan of gooey sauces so almost everything  I cook would be a dry rub.  You of course should experiment and see what works best for you.  I don't often recommend a rub because it is a matter of personnel taste.  This recipe would also work well on most other pellet grills or charcoal and gas grill using indirect heat for the low temperature recipes.

KC Steak Recipes Direct from Web

KC Steaks Recipes direct from web

Recently I have been purchasing beef from KC Steak company.  I like the convenience of mail order but not if I have to sacrifice quality or pay significantly more money.  So far I have really enjoyed the strip loin roast.  The T-Bones were really good once I found the proper cook method.  The 5 oz top sirloins I don't think I'll buy again but I still have more to try so my mind can be changed.  I also dont think I'll pay for price for any of them.  It turns out they do go on sale from time to time and when combined with promo codes they real are a great value.  Read more about Promo codes here

I recently received  KC Steak Seasoned Strip Loin Roast.  It came well packaged in a Styrofoam cooler with dry ice and arrived frozen.  I didn't actually use the KC Steak I actually adopted one I found online by Malcom Reed of Killer Hogs BBQ Team.  You can read my Blog Post here on how I adapted Malcom's  recipe Here is my Blog post.

Here is my cooking methods and reviews of the T-Bones I purchased from KC Steak Company,

Kansas City Steak Company T-Bone

The Kansas City Steak Company T-Bones

I recently purchased some T-Bones from The Kansas City Steak Company.   I received 4 20 once T-Bones.  I only cooked 1 to start.  Keep reading to see all the details of the cook and learn why my 2nd cook was much better

Ingredients

1 22 OZ T bone Steak
Salt, Pepper or your favorite rub

Grill Setup

Start Traeger on smoke for 10 minutes with lid open'
Preheat lid closed to temperature 350 to 400

The Cook

They recommend leaving in the vacuum seal  packaging.  The directions say thaw in refrigerator for 24 hours prior to cooking.  I seasoned with my normal dry rub so I could see how the taste measured up to my local butchers T-Bone.  I cooked them about 5 or 6 minutes per side until an Internal temperature of 140 at 350. I did use Grill Grates and was able to obtain nice sear marks.

The Taste

The steak did taste good,  It was a little grizzles in parts.  The steaks at my local butcher tastes much better and for a significantly lower cost.  I do have some more T-Bones Left and plan on cooking them a little differently next time.  I will use the porterhouse recipe on Traeger web site which includes smoking for 30 to 45 minutes and then doing a reverse sear.

Customer Service

They do seem to have really great customer service.  When I cancelled my auto ship they asked me why and i stated I could get a better quality and better tasting steak from my local butcher for less so they sent me 2 more T-Bones.  I sure do hope they taste better.  Here is the Post on my 2nd T bone Cook

KC Steak Seasoned Strip Loin Roast

KC Steak Seasoned Strip Loin Roast

I recently purchased Seasoned Strip Loin Roast from the Kansas City Steak Company.  It was an excellent cut of meat for the sale price which at the Time was 29.99 for a 3.5lb to 4 lb roast.  I also had a coupon for $25 off a $75 order with free shipping.  This Roast normally sells for 54.95 to 64.95.  The cheaper price is as an add-on.  I don't think I would purchase it for full price.  I have a great butcher nearby who could cut me a roast for less the there full price,  I did order 2 more at 24.95 on another sale and again I had a $25 off 75 free shipping coupon.  That makes it a great deal in my opinion.

The method I used to cook it on my traeger was adapted from Malcom Reeds BBQ done right web page.

Ingredients

3.5 to 4 lb Strip Loin Roast
Olive Oil
Salt
Pepper

Grill Setup

Start Traeger on smoke for 10 minutes with lid open'
Preheat lid closed to temperature 180

The Cook

Removed the roast from fridge about 1 hour prior to cooking
Rub in some olive oil
Season  well top, bottom and side with salt and pepper.
Set at  room temperature for 45 minutes or so.
Place the Roast  on the grill for about 1 hour at 180 degrees.
Turn up the grill to 225 and cooked to an internal temperature of 130 for medium rare.

The Wrap and Rest

Once desired temperature was reached remove the roast from the grill and wrap  with foil and allow it to rest for 30 minutes to an hour. Slice against the grain and enjoy.

The Taste Test

The Roast was tender and moist and tasted amazing.  This truly is a poor mans prime rib.  My wife who rarely eats beef had 2 or 3 slices and asked me if I was going to order more soon.

Please Note:

Any recipe I make is just a guideline.  I am not a big fan of gooey sauces so almost everything is I cook would be a dry rub.  You of course should experiment and see what works best for you.  I don't often recommend a rub because it is a matter of personnel taste.  These recipe would also work well on most other pellet grills or charcoal and gas grill using indirect heat for the low temperature recipes.

Kansas City Steaks T-Bones 2nd Review

Kansas City Steaks T-Bones 2nd Review

In My previous review of the Kansas City Steaks T-Bones.  I basically said I wasn't  impressed and though I could get a better steak at my local butcher for less money.  While I probably will buy T-Bones at my local butcher my second cook with the KC Steaks went well.

2nd Cook KC Steaks

This time I cooked the steaks a bit differently and the results were much better.  I followed the Traeger website  recipe for a porterhouse.  A T-Bone is Like a porterhouse but with a smaller Filet. I seasoned with only salt and pepper. I used the smoke setting (which on my Traeger seemed to lock in at 160 using a P Setting of 1).  I smoked until an Internal temperature of 110.  I took them off the T and tented in foil.  I then turned my Traeger to Max Temperature and when it got above 425 I cooked to an Internal Temperature of 140 degrees.  I then flipped the steak to sear the other side for less then a minute.

These tasted much better then the first cook where I didn't smoke first.  I am still not convinced they are worth the extra money.  I may need to do a side by side comparison between these steaks and my local butcher.

I now see why people purchase these, they are very convenient and do taste good when cooked properly.  They are also a great gift for that person who is hard to shop for,

The Order Process

Kansas Steak Company made the order process real easy.  There web site is very easy to navigate and also informative.  They do have a 12.95 flat rate shipping.  If you place and autoship they will waive the shipping charges.  I placed my autoship for 6 month down the line but you can easily go on there web site and reschedule it for sooner or later or even pause the autoship.  You can also select the date you want your order to arrive.

They frequently have deals and specials so click the sale link and see what you can find. Also be sure and pay attention to the banner at the top of the page.  The day I ordered they had 2 free 14 oz bone in filets with any order over $100.  They also have great prices on Add on Items.

Note there are at least 2 other ways to get free shipping.
1 - If you order prime beef you get free shipping
2 - If you have a promo code you get free shipping.

First Impressions

They came well packaged in a heavy duty Styrofoam cooler with dry ice.  I ordereed 6 steaks 2 Filets and 4 T-Bones.  Each selection came inside a cardboard box and shrink wrapped.  They arrived frozen in excellent condition. Each box contained a seasoning packet.  It also came with a cooking suggestions book and $25 off your next order of $75 with free shipping.

The Cook

They recommend leaving in the vacum seal  packaging.  The directions say thaw in refrigerator for 24 hors prior to cooking.  I seasoned with my normal dry rub so I could see how the taste measured up to my local butchers T-Bone.  I cooked them about 5 or 6 minutes per side until an Internal temperature of 140 at 350. I did use Grill Grates and was able to obtain nice sear marks,

The Taste

The steak did taste good,  It was a little grizzles in parts.  The steaks at my local butcher tastes much better and for a significantly lower cost.  I do have 5 more T-Bones Left and plam on cooking them a little differently next time.

I will update as soon as I do the cook.

Grilled Iowa Chops and Baked Potatoes

Grilled Iowa Chops and Baked Potatoes

Grilled Iowa Chops and Baked Potatoes
Grilled Iowa Chops and Baked Potatoes

The notorious “Iowa Chop” is the seriously thick* and succulent pork chop, cut from the lower back of the hog, just behind the rib. Recently dubbed the “Porterhouse Chop”, they have a characteristic T-bone shape, with a substantial amount of loin meat on one side of the bone and a portion of tenderloin on the other side.  The thickness (1.25-1.5 inches) of this chop led it to be coined “The Iowa Chop”, in the 1980’s by the Iowa Pork Producers Association. The Iowa Chop is still in high demand and is used widely still today throughout the Midwest and beyond. The above defination of an Iowa Chop taken from the Web Site http://foodandswine.com/

Iowa Chops are one of my favorite things to grill on the Traeger.  They always come at tender and Juicy.  It really is the most perfect meat.  I often grill them with sweet potatoes and pineapple, but for this cook I changed it up a little and cooked baked Potatoes with them.  I did have pineapple left over from yesterday Ham Steak and Pineapple cook.  I didn't brine or marinate this time.  I used Trader Joe's Coffee and Garlic rub.  You can use your favorite rub or just salt and pepper.

Ingredients:

6 Iowa Pork Chops about 1 inch Thick and 1 LB each (T-Bones)
Your favorite Dry rub for Pork
4 Large Baked Potatoes

Preperation

Wash Baked Potatoes
Cut in 1/2
Wrap in foil
I used a smal half to clean and season grill

Rub Pork chops with your favorite rub.
I used Trader Joes Garlic and coffee rub

Grill Setup

Start Traeger on smoke for 10 minutes with lid open'
Preheat lid closed to temperature 375

The Cook

I placed the Potatoes on the grill for about 50 Minutes
After 50 Minutes I placed Pork Chops on grill
After about 7 minutes I flipped the Pork Chops
I Continue to cook the Pork chops  till an Internal Temperature of 140 degrees

The Wrap and Rest

Once desired temperature reached remove from grill tent with foil and allow to rest for 15 to 30 minutes

Bargin BBQ Pellets
I love  the convenience of shopping from home.  I dont enjoy getting in the car driving to the store and fighting thru the crowds.  Don't get me started on those parking lot's.  When It comes to BBQ Pellets I have found some of my best Prices Mail order. I recently posted about Sportsmans WareHouse having various brand pellets at 50 to 60 cents a pound mail order.

Lately I have noticed you can get great prices on Pellets at Walmart  Just Click this link and look down the left side of the page for anything that says shipping pass. It has been my experience that anything that says shipping pass will offer free shipping on orders of $50 or more about 80 to 100 pounds of pellets.  You would also have the option of free store pickup if you prefer or for just 1 bag.  I have recently seen Trager pellets for less then $13 for 20 lbs as well as Pacific Gourmet Pellets for $11.76 a bag.  Check the link often you are bound to find something you like,

So many recipes so little time

As I surf the BBQ Websites I find what I like to call my bucket list recipes.  I use to save these recipes to pinterest and sometimes I still do but some of them are so good I want to place them in my Blog also.  They will always state that they are a buck list recipe,  As with any bucket list I hope I never get to all of them but its fun to dream.

Hot Dogs and More on the Traeger

Hot dogs AKA Tubular Meat

The great thing about hot dogs and other Tubular Meat (Sausages and Brats) is you can always seem to squeeze a few on the grill.  I like that best at a high Temperature 375 or more to get a good char
but pretty much any cooking method works as long as your get the proper internal temperature.
Most of the time I just cook them as is but every now and then  I do prefer a Beef Hot Dog like Nathans. The Brats and Sausage are often Pork Products

I do something special like wrap with bacon, or better yet stuff with cheese then wrap with bacon.

As you can see I have cooked hotdogs all by themselves.  I have cooked them with hanburgers and pineapples, pizza and pork chops and pizza.
