The wife left town for a few days to wish her mom a happy birthday in Iowa, so its just me and the dog,  It Looks like I have a Long Weekend of smoke ahead "Traeger on".  Here is what the proposed menu looks like.

Saturday Dinner

Traeger Recipe

The beauty of cooking the Lobster Tail, Bacon wrap Filet, Pineapple and Corn on the Cobb Together is that all start and finish at the same time,  I go into greater detail about the cooking methods elsewhere in this blog but the Readers digest version is Pre Heat to 225 cook steak and Lobster to an Internal Temperature of 135 to 140 about 45 minutes

Traeger Recipes:

Pork Steaks:

These pork steaks are pre-seasoned with Bobs BBQ seasoning.  Cook them at 350 on the Traeger till an internal temperature of 140 to 145.  About 10 Minutes on each side

Sweet Potatoes

I wash the Sweet Potatoes
Cut them in half wrap in tin foil
Cook at 350 on the Traeger until soft about 60 Minutes.

Monday Dinner

 Pulled Pork Traeger Recipe



Ingredients:

Bone In Pork Butt 6 to 10 lbs or more
Your favorite Dry rub for Pork
Apple Juice in spray bottle

Preperation

Rub Pork Butt all over with your favorite rub

Grill Setup

Start Traeger on smoke for 10 minutes with lid open'
Preheat lid closed to temperature 225
Some People smoke for first 3 hours either using 180 or the smoke setting
then raise to 225.

The Cook

Right before placing on grill spray with apple juice all over
Place Pork Butt on Traeger
Spray with apple juice every 30 minutes or so
After about 3 hours you can move to shallow pan with enough apple juice to cover bottom of pan
At about 6 hours place temperature probe in Traeger.
Continue to cook till an Internal Temperature of 203 degrees

The Wrap and Rest

Once desired temperature reached removed from grill double wrap in foil and place in cooler to rest for 1 to 3 hours.  Pull and enjoy.  We use a light coating of Jack Daniels BBQ sauce after we pull

Recipe Notes

I delay putting the Probe in because its going to take 10 hours or more to cook and the probe gives the smoke a few more places to escape.


Some people wrap the butt  (Texas crutch) at about 160 to get past the stall


Tong Test if you dont cook to temperature --When you can lift the Butt with Tongs and the bone falls out its ready

My Favorite Traeger Day

Traeger Recipe
One could argue that any day I cook on my Traeger Junior aka Tjr is my favorite Traeger day.  With my schedule its not often I get to cook twice on Tjr in the same day.  Yesterday was such a day.
My morning errands included stops at Paul's Market, where I purchased bacon wrapped Fillets and Apple Brats.  I then stopped at the supermarket and purchased sweet potatoes and Brioche hot dog buns.

I fired up TJr and made the apple Brats and sweet potatoes for lunch.  Then a few hours later I fired up the T again and cooked the Filllets and Lobster for diner. 

The diner was special because my mom was in town and my wife picked up our 6 year old grandson from school.  My grandson only ate the fillets but every one else had filet and Lobster.  It was the first time I cooked for mom, she finally was able to visit.

The Technical details:

BBQ Lobster

Cut shell with Scissor
Brushed with melted butter
Smoke at 225 for abt 45 minutes Internal Temp should be 135-140

Smoke at 225 for abott 45 minutes to an Internal Temperature of 135-140

Cooked Apple Brats at 375 about 30 minutes flipping once.  Got a nice char both sides

Wash Sweet potatoes
Cut Sweet potatoes in half
Wrap Sweet potatoes in foil
Cook Sweet potatoes at 375 for about an hour till soft like butter

Traeger Recipe 

Whats for Lunch.  Apple Bratwurst fresh made from a local butcher and Sweet Potatoes.  The Brats had a really nice Char and the Sweet Potatoes were amazing soft and sweet

Apple Brats Recipe

Follow normal Traeger Start up procedure
Then Close lid and preheat to about 375
cook about 30 minutes turning once.  
When you have a Nice char on them they are done

Sweet Potatoes Recipe

Rinse Potatoes
cut in half 
wrap in tin foil
cook for about 60 minutes or until soft like butter
dont burn your fingers unwrapping foil

Traeger Recipe

Smoked Pork Tenderloin.
I have cooked it with a dry rub or Marinated in Italian Dressing.
The Method is the same either way.

Smoked Pork Tenderloin Traeger Recipe

Startup Procedure
Start Traeger on smoke for 10 minutes with lid open'
Preheat lid closed to temperature of 225
Place on grill
cook till an Internal Temperature of 145.
If you don't Marinate you may want to spray with apple Juice every hour or so

The Sweet Potatoes cooked for 2 hours at 225 they could have used an extra hour.  The Microwave makes up for under-cooked potatoes.
